Edible Portion #
About Edible Portion #
Edible Portion (“EP”) is the usable part of an Ingredient. This is also known as usable portion.
Fillet apps use edible portion to do calculations like ingredient quantities and food cost.
For any Ingredient, you can set what percentage (%) of that Ingredient is usable or edible.
If you don’t set an edible portion for an ingredient, Fillet apps will use the default setting, which is 100%.
Example
Recipe: Vegetable soup
Ingredient | Edible Portion (EP) | Amount in Recipe | Required Quantity |
---|---|---|---|
Olive oil | Not set | 100 mL | 100 mL |
Potatoes | 90% | 1.8 kg | 2.0kg |
Onions | 80% | 3 kg | 3.75 kg |
Carrots | 70% | 12 each | 16 each |
